After a long hiatus, Ryan and I met to bake these decadent cupcakes in celebration of Kate’s birthday. Perfect for a coffee lover, we even doubled the espresso content to give these an extra kick.
Feeling festive with birthday-themed cupcake papers (thanks, Dollarama!), we prepared the cake recipe. There was enough batter for twenty-four cupcakes–exactly the number of cupcake papers in the package. Coincidence? More like fate!
The recipe only gave the cook time for a full cake, so I watched the cupcakes intently and they ended up taking approximately 18 minutes to bake…
And we were finally ready to decorate.
Ryan prepared the mocha buttercream frosting, and we took turns frosting the cupcakes with a ziplock bag as our homemade piping bag.
Skillfully, Ryan set aside some butter and confectioner’s sugar to use for the lettering. We added green food coloring, and loaded the frosting into a squirt bottle from Dollarama. We began decorating!
We set up shop with frosting, sprinkles, marshmallows, and chocolate covered espresso beans!

Finally we presented our masterpiece to Kate…
…and she loved them! They turned out super moist, decadent, and chocolaty, and the frosting was rich and melt-in-your-mouth. The espresso in them definitely came through; it was almost as though each cupcake was cup of coffee. And this was exactly what we had intended.
To cap off a perfect day of baking, we danced the night away to celebrate the birth of Kate, and everyone had a great time.
